For the Salad

  • 1 lb butternut, separated into 1-inch pieces
  • 2 tbsp olive oil
  • 1 tsp olive oil
  • 1 teaspoon kosher salt and freshly crushed black pepper
  • 1/2 cup quinoa, rinsed
  • 1/4 cup sunflower seeds
  • 1/4 tsp cayenne pepper
  • 4 oz mixed greens (such as baby spinach mesclun, or baby kale)
  • 8 oz of chicken cooked, roasted (sliced or shreds)
  • 6 oz cherry tomatoes, halved (about 16 tomatoes)
  • 1/4 cup fresh, lightly packed parsley leaves
  • 1 avocado pitted, peeled, and then thinly cut
  • 1 medium apple, cored, and thinly cut into slices

White Balsamic Vinaigrette

  • 3 tbsp olive oil
  • 2 TBSP white balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 dash of kosher salt freshly crushed black pepper
  • Half a small onion red cut thinly
  • 1/3 cup lightly packed shaved Parmesan cheese
  • Preheat the oven to 425° F.
  • Spread the squash indices on a baking sheet with a rim and drizzle the squash in olive oil. Sprinkle liberally with salt pepper, and move them to the oven. Bake for 20 minutes before flipping them and roast them for an additional 20 minutes or until they are golden. Reduce the oven temperature down to 350 degrees F.
  • In a medium-sized pot, mix the quinoa, a big pinch of salt, and 1 cup of water. The water should come to a boil at a high temperature. Then cover the pot using the lid and lower heating to a low. Cook the quinoa in about 12 minutes. Close the lid, and continue cooking by stirring frequently till the liquid has gone away and the quinoa has become tender but still al dente approximately 4 minutes.
  • Spread the seeds of sunflower on a baking sheet. Drizzle them with one teaspoon of olive oil, then sprinkle well with salt and black pepper add cayenne and salt. Sprinkle them with the seasoning and place them in the oven. The sunflower seeds are roasted until they’re aromatic and toasty, approximately 10 minutes while stirring every so often. Remove them from the oven and allow them to cool.
  • Divide the chicken, greens tomato leaves, parsley avocado apple the red onion, chopped Parmesan and butternut squash, quinoa, and sunflower seeds in two bowls for serving. Dress with the White Balsamic Vinaigrette. Serve.

White Balsamic Vinaigrette

  • Whisk together the olive oil with white balsamic along with dijon mustard. Add the red onion and parmesan pieces. Add the salt as well as pepper.
